I think you are on to something, my mom always used to put apple, orange, or grapefruit juice in with canadian geese, it did make a difference in the tenderness factor, and it gave a slightly sweet aftertaste.

leave out the carrots too! they taste like soap chips. theres a reason the good LORD made them orange! its like a sign saying STAY AWAY FROM ME[8D]

for me, when the crock pot and venison are involved, anything goes! There are so many different ways to cook it!
