Deer burger with no added fat is so dry you can hardly eat it. I have been grinding pork with my deer for years. Never had it go turn bad or get old.

I grind all my own venison. I remove all fat, tendon,blue membrain before I grind it. This is what causes " gamey,off flavors" .
I do the same. It does reduce the gamey taste. I dont mix mine with any other meat. I use deer hamburger any time I would use beef hamburger. I dont use it for making hamburgers, I tend to leave that for beef.

I don' t add fat the my venison burger. I use it just like beef burger for sauces and chili, etc. If I want patties, I add an egg, worcestershire sauce, and spices before making the patties.
