Has Anyone Here Ever Canned Dear Meat

I was sitting on top of a mountain with one of my field techs a few years ago. We had finished a survey and were waiting on the rest of the crew to catch up. He pulled a pint mason jar out of his backpack and cracked it open. It was venison his mom had canned. We were tired and hungry, but that was one of the best things I ever remember eating. He was going to get his mom's recipe for me, but never did. As I remember, the meat was cut into about 1 inch cubes with basically salt, pepper and some onion. He claimed that elk was better. I keep telling myself I will try canning some day, but seem to always need more sausage.
