Hadn't seen him in a while so here's to him.
One of my favorites.½ cup celery 1 can cream of mushroom soup
½ cup chopped bell pepper Salt
1 bunch green onions, chopped Black and Red pepper
Oil Worcestershire sauce
3 cups cooked crawfish tails Paprika to taste
3 cups cooked rice 4 hard cooked eggs
1 ¼ cups water 1 cup bread crumbs
Sauté celery, bell pepper, and green onions in oil until wilted. Add crawfish tails and sauté for 5 minutes. Mix the above with cooked rice, water, bread crumbs and soup. Add seasoning to taste. Pour this mixture into a greased baking dish. Chop eggs very fine and sprinkle over top. Bake uncovered at 350 degrees for about 25 to 30 minutes. Serves about eight.
