Do you guys "age" your deer with the hide on? I never have. The guy that showed me the little that I know always wanted the hide off ASAP so the meat could cool quicker. How do you all hang your dear, hide on or off?

A tip- We have been using lopping shears (tree trimmers) for removing legs and heads, It is fast and easy.
