If you skin and cut the breast out; inject with sprite, S and P a little. Wrap in tin foil. About 5 minutes before he's done open up the tinfoil to expose breast, turn on broiler brush a little butter on breast and brown.

If you pluck put a drop of dish washing soap in the scalding water to get past the oil on the feathers. Dip for 10 seconds. Pluck until they start getting hard to pull out. Repeat the 10 second dip agitating him up and down to get water in between the feathers every time. Cut off tail. There is a nasty oil sack on it.

Score the skin at top of breast to release fat. Inject with sprite.S and P. Prop the scored end up a little with a ss bowl or pot so the rendered fat runs towards the feet end crisping the breast as it cooks.

Since it will be slightly sweet you are going to need to come up with a savory side to ballance the meal out. I like a rice pilaf.

Quick and Easy---cut duck into cubes, marinade, and make into shiska-bobs (sp?) with onions, green peppers, and bacon...mmmm..

duck is an amazing meat lots of flavors can be absorbed in it, wht i do is marinate it overnight in a typr of oily salad dressing with spices, vinigrete or someting like that and then i shiskabob it and grill it it is an amazing simple recipe and from my experiences with it i loved it everytime
