Default CURING SALTS

I am looking for the shelf name or the is Curing salt the proper name
Need it for jerky. A guy I know is looking for it and all I have ever put in it was regular salt
But he says there is a special curing salt for meat and can' t remember the name

Canning, Pickeling, Purrified or Kosher salt will work fine. Salt for curing cannot contain additives such as Iodine.Try to use granulated salt as most receipes call for this kind versus flaked which will have a weight difference per cup. I use Diamond Chrystal myself. If you disolve a couple of spoonfuls in water it should stay clear which means you have a quality salt with no heavy metals if its cloudy it is not as pure. canning or Kosher salt.

why would he want to put salt in jerky???[X(].

Girls at Therapy get a kick out of fellas passing recipes around
Here' s my jerky recipe
1/2 tsp salt
1/4 tsp pepper
2 tbsp of brown sugar
1/2 tsp garlic powder
1 cup of china lily soya sauce
1/4 tsp of onion powder
4-5 drops of liquid smoke
4-5 drops of hot sauce
Marinade for 12 hours and dehydrate for 12 hours

I use Morton' s sugar cure for hams and bacon. I don' t think you want it for jerkey though. A lot of jerkey recipies have been posted here. Most are home made and are readily available.

Look back thru the archives and you' ll find hundreds
