Hey Jerseyhunter, I like your recipes. But on the Brats, can they really be concidered venison brats If I were to make venison brats I would use 7 parts venison 2 parts pork fat and 1 part beef fat/suet. |

I wonder if any certified chefs in 5-star kitchens ever use wild venison in their recipes?
