Elk breakfast sausage

I had breakfast sausage made from elk in colorado. It seems to have beef in it and is a little heavy for breakfast. Any cooking suggestions?

Use it in stuffings, try it as a dinner sausage with corn bread, stuffed pocket of veal, or, ship it to me. Never too heavy for breakfast.:D

I use breakfast, and Italian elk sausage in spagetti, and lasagna. I also use both types of sausage for breakfast burrito's.
