Venison burgers

Default Venison burgers

The ground venison I have seems to be too lean to make a decent burger out of (meat falls apart). Outside of adding fat is there anything I can add to try and get the burger to stick better?

Couple of eggs,crush and mix in some seasoned crutons.Can also mix just a wee bit of cheap burger in with venison.Will add a little fat to hold it all together.

Biggest thing that helped keep my burgers together was buying a cheap burger press.Have a plastic one that will make round or square burgers.

Coat the press with little oil,press burger,peel it out directly to grill or pan.

If you make the burgers up and then put them on ice, so that they are almost frozen they will hold together better.

We like to mix in a little ground pork to it. It stays together good
and helps keep the flavor of the deer to it.

The sausage maker sells fat replacer, and soy protein. Both work.

Get some cheap hamburger and mix it in50/50. I don't use pork as the flavor changes after storeing in the freezer any longer than 3 months. Never had that problem with beef.

I also add pork to my venison burger BUT, i don't add it untill i'm going to use it. I buy the ground pork (i prefer itilian sausage) when i thaw the burger, and add it before cooking.

You could try a variety of things. Add egg, flour, or rolled oats, bread crumbs, cracker crumbs. I like to sometimes throw in a few spoons of onion soup mix mmm good.

Absolutly hands down the best thing I ever used was bacon to grind with my venison. You can buy ends and pieces in a 3 or 5lb box cheap. Grind about 30% bacon and 70% deer and grill it over charcoal.....best bacon burger I ever had.
