I need one too. It isn't easy if no one has has ever taught you how and you have to figure it out yourself.
I rented a video once that field dressed and caped a buck as well as skinned the faced/head. Great video but I can't remember the name. I rented it from Santa Cruz Archery, (Santa Cruz, Ca) ....It is the best field dressing video that I have seen.
I have never seen a book on the topic worth buying nor anything or the dressing out of birds.

There is a collection of books out from the "Hunting and Fishing Library". They have been around for quite awhile and there must be two dozen of them, each is a different subject and/or species. I have half a dozen myself. One is called "Dressing and Cooking Wild Game". These are hardback books with beautiful pictures and detailed instructions on cleaning big/small game and also birds. They cost around $20.00 each up here in Canada so probably half that in the States. I highly recomend them. Good luck with the hunt.

There is a book called "Dress Em' Out" written by Captain James A. Smith that is pretty good. Covers big game, upland birds and watefowl dressing, skinning, tanning etc. etc.
