Id have to say Whitetails.... While a turkey has keen eyesight, a deer has good eyes, and that darn sense of smell that gets so many of us... plus I think a deer is a lot harder to pin down a routine or to call into bow range than any bird....
just my opinion

In my opinion, a turkey is harder to kill. I have much better luck with deer than I do with turkeys. I live in an area that has a long season for deer hunting and very generous bag limits(unlimited number of does). I realize a turkey is pretty dumb...they will walk back and forth for hours in front of a fence looking for a place to cross when they could just simply fly over it.
Now, if you change the question just slightly and ask, Which is harder to kill a turkey or a mature buck? I would definately answer the mature buck.

I live in Southwest Virginia and this area is rich with both deer and turkey.
I have taken several deer with my bow but last year was my first turkey. In my opinion a turkey is harder to just DRAW on much less get a good shot.

Its pretty hard to say but, id have to say a Big buck is harder to kill then any turkey but those little bucks and does are easyer to get then a turkey because Turkeys are hard to hunt too.

There are too many variables (location, population, pressure, etc.) to say that one is always easier to bag than the other.
A turkey is an extremely alert and evasive animal. Killing one with a bow can be very difficult, even when you score a hit. You might score a killing hit, but the bird might make it to the next county before it dies. Try to find that blood trail.
