Welcome to bowhunting and welcome to the forums. To answer your question, a gilly suit probably wouldn't work because you still have to draw your bow and that will cause movement. If there are no suitable trees, I would suggest a ground blind or an elevated enclosed blind. In either case, you will want to get it out there very soon as the deer will need time to become used to it's presence. Are there any woods that borders this tall grass that you have permission to hunt? The deer have to be coming from somewhere. Try looking at the property in an aerial view, such as Google maps. That might give you a better idea of what to do. Hope this helps.

jus but a pop up cammo tent..takes seconds to set up and i have seen people use blue and black 2 tone tents and the deer just walk right by them....out in the middle of a feild with no tree's tall grass or cover of n e kind, have to make sure you dont have n e windows open behind you so the game wont see you movin around in there, needs to be a "blackhole". sounds like you kno wat ya got comin so u should be ready...shoot shoot shoot all i can say, and not 10-50 at a time, take ur time and space em out because it is easy to throw ur "bow muscles" if ya never pulled 50-70 lbs b4, start small and turn up the #'s through the months..i have seen chiks bow hunt at 40 and be successful so do worry bout that.
remember that the game will be as close as 3 feet from ya out to never never land so be ready..practice the same way u will be sitting in ur blind...if u r gonna be sittin down then standin up shootin aint n e practice.gl
