RE: Deer burger
My daughters wern't too keen on straight venison so I started adding about 1 pound of mild Italian sausage to every 4-5 pounds of Venison. Ever since we've used it for hotdishes, burgers, sloppy joes and my daughters love it.

When grinding deer burger weadd 15% beef tallow. Nothing worse than a dry, crumblygrilled burger.[:'(]
