I haven't found anywhere in Nc that will turn venison into bologna but Jeff is right had some that was brought to me from WV and it was very good

I wish I had the time to process my own deer , but I don't.

The processor I take my deer tois also a a butcher shop. He is very ingenious in what he can do.

Garlic bologna, about 10 different flavors of hot sticks and he'll even spice up your loins for you. It get a little pricey, but well worth the $.

Listen guys .... I don't know how many of you grind the leg meat, but if you steak them out ..... pound them thin... they will make some of the tastiest, most tender steak sammys you have ever had! .... Man, I'm gettin' HUNGRY![8D]

ive had alot of different stuff from venison kilbasa, sweet sausage, hot sausage, summer sausage, bologna, party sticks, hot sticks, cheese sticks, jerky....my favorites always kilbasa, summer sausage, and bologna..i dont even cook it most of the time...i will take that over sticks or jerky any day.

we been marinading alot of our chops and steaks lately...marinaded in Jack Daniels BBQ sauce for a while(over night) is always the best..but i like BBQ sauce. and we get our steaks cut really thin. we found that with older deer it aint like chewin boot leather...and takes marinade REALLY well. mmmm im gettin hungy!!

If you are interested, I have a jerky recipe that I created that most have told me is the best they have ever had ......
I'd sure be interested too if your willing to share, I also like garlic salami & hot sticks that a local guy makes.

Have family member who is a butcher. He makes dogs, brats, steaks, jerky the norm but also makes a breakfast sauage for making breakfast tacos great for those good mornings heading to woods, and also a great meatloaf mixture.
