Out of season deer hunting

I have a chance to do some "out of season" crop damage permit hunting for a guy who is about to plant a grape vineyard.
Any thoughts on anything being wrong with the meat during this time of year. I'm sure that the does will have more hormones flowing through them, but doubt that would taint the meat.

There's also a method of quartering a deer that wouldn't have you gutting it, whatsoever.
The only meat "wasted" would be the inner tenderloins (for those of us that don't take hours scraping bones).

You will hve to worry about insects that normally arnt present during the hunting season when you are dressing. Like with rabbits up here in Wisconsin, we cant eat them all tiems of the year.

I think I'd probably employ Jeff's method mentioned below and not even have to get into the body cavity. Yeah, I'll lose a little meat, but it won't go to waste.

Like I said, it would be tough to gut one that far along, but I could do it. What would be even harder is killing one thats already given birth. When does that ususally happen where you're going to be hunting?
