I use the AccuSharp, then run them over a ceramic steel.

I've been very happy with my Lansky sharpener. I've had it for 15 or 20 years now. Great investment. Easy to use. Makes the kinfe shaving sharp.

A wet stone. Knife sharpening is becoming a lost art. Granted it takes quite some time to put a good edge on a blade, but it's well worth the effort.
You have to start with a good knife. Those stainless steel knives, I just throw away.
It will take me about 2 hours to sharpen my knife, but once I'm done I can skin about 10 to 12 deer with it (hitting bone sometimes) and it's still razor sharp.

I use a gatco edgemate carbide sharpener it works great on hunting and butcher knives. I got it at Jays i think it was like 16.00. It gives knives a great edge and can't even tell its been sharpened.

I use a Meyerco. I got it at cabelas. It works slick and can clip on your belt. Check it out.

Here is another vote for the Lansky system. My dad has used it for years and he gave me one a few years ago. It works great. I just did 2 knives the other night while watching the ball game.

You can't beat a good wet stone or india stone for a good knife. I have found that a belt sander works good for some of those cheap stainless kitchen knives.

I use a diamond-stone to sharpen everything. It's just like a wet-stone, only you can use it dry in a pinch. I've had the same one (red) for I don't know how many years. It doesn't seem to wear out or get clogged. I keep it clean though.
