At this point in my life (age, physical shape, etc.) I'm capable of dragging a deer. And I always do it without the animal field dressed, as I do it at the house for a few reasons (getting live weight, and keeping coyote intrusion limited in areas that are great hunting grounds).
I love the torture as NY Bowhunter said. It's the continuation of that success. The same as the first moment you get to walk up on that downed deer. I feel proud. I feel excited. I feel alive.

This is what I meant by some people having different opinions of what wasting meat means. Now if you had said you could do a deer in 20 minutes I would have tended to agree because I know you leave plenty behind.

I've done enough deer.........and seen other people do plenty more to know better. A good friend of mine has been a professional meat cutter for over 20 years and butchers deer for extra money during the season. He is happy if his crew does a deer in 30-40 minutes........and they have 3-4 guys going at once.

Your math is WAY off.
First of all he charges $75 for a straight cut..........more for anything out of the norm of steaks, chops and grind. At 40 minutes/deer that is 3 deer every 2 hours for a total of $112.5 an hour divided 4 ways is just over $28/hr. He does not divide it equally either since the equipment is all his.

I clean about 40 to 50 deer per year. Once the deer is on the gambrel in the air (not yet gutted) I can have it in the cooler in about 10 to 15 minutes. But that is having the tenderloin, backstraps, neck, hams, and shoulders in the cooler still on the bone.
After that I cut my steaks and all. I can't see how you could debone a deer in 20 to 30 minutes and feel like you have done a proper job.

I get the deer cart for smaller deer. They work well.
Depending on the deer's size and where it falls I'll drag it down the river bank and get the canoe. Park the truck at the bridge. Paddle thecanoe with the deer in it downto the bridge where the truck is waiting. Saves me a 3/4 mile drag through some nasty terrain.
