Hog meat any good? What about bear meat?
Here in MI we don't have any wild hogs so I've never tasted it. Is it any good? What about black bear? I'm thinking about going on an archery bear hunt and was wondering how it tastes. Hate to waste meat....

Black bear meat is excellent. Trim away all fat and slow cook on a low temp for 5-6 hrs. We always have a beer and bear party after we get home......Awesome....only thing is that after you eat bear meat you have a strong craving for honey and want to rub your a$$ on a log.:D

Wild hog meat can be excellent. Here in Florida we have quite a few of them and I love to hunt them. There are a ton of ways to prepare it. Some people will tell you that the big boar hogs are worthless but thats not always true, they can make great sausage. Its a wild meat just like any other animal you hunt, but damn is it good. Bear ehh i duno, unfortunately we cannot hunt our bears in florida.

ive found that the best way to cook a hog is to smoke itall day long and it just falls off the bone when its done and it has an awesome flavor to it.

Never had wild boar ,but I sure do love a good feed of bear .The bad thing with bear that they are very fatty and it's very important to get rid of as much fat as you possibly can ,it leave's quite a bad taste if you don't .
I usually will cookit on the BBQ in order for the fat to drip off ,or if your cooking it in a frying pan you need to continuosly pour the fat out as your cooking it ,I'll even boil it in some case's . nubo |

In Texas we have mostly feral pigs they are descended from introductions of European wild hogs for sporting purposes, and from escaped domestic swine that have established feral populations. European wild hogs have several distinguishing characteristics that set them apart from domestic or feral hogs. Among these are brown to blackish brown color, with grizzled guard hairs, a mane of hair (8-16 cm long) running dorsally from the neck to the rump, a straight heavily tufted tail, and ears covered with hair. Characteristics of feral hogs are varied, depending upon the breed of the ancestral stock. European wild hogs and feral hogs interbreed readily, with traits of European wild hogs apparently being dominant, and are quite excellent to eat.
We also have Javelina hogs, they on the other hand make an excellent trophey, but not made for human consumption as they tend to taste worse than they smell... I know this by doing so.. :D |

I tend to agree with a few others when I say I'd rather eat $h#t sandwiches than eat bear again. Wild hog on the other hand is fantastic meat the smaller the hog the better IMO.

Last year I arrowed a large 400 lbs black razor back boar and couldn't wait to sink my teeth into it.
I wouldn't use your mouth to eat it again. The smell cooking it would run you out of the house and on the weber was no better. I soaked in buttermilk for 24 hours and it was almost like smelling baby's diapers. I bet it would make great bear bait.I'll find out about black bear this fall hopefully.;) |

Ive taken four wild hogs in my life and the best eating one was the "barred bore I killed last year it was excelent and a big hog.the next best was the smallest hog I ever killed. I cooked the small one in wine carrots cellery Quarted onions and coaked the meat like any roast,Verry good eats.The others, large boars especially really strong .

Never tried hog. I have enjoyed bear meat though. I love the sausages and pepperetts. Just make sure you cook it well. Most bear have pork roundworm and if not properly cooked can cause illness and even death.

Bear meat is good when cooked like we do it. Trim the fat and cook slow. Prissy girls are at these bear and beer parties and they like it too. The bear meat is gone before the beer and we are heavy drinkers.Bears are mainly vegetarians in the fall eating berries, nuts, and donuts. It is all about the technique of how you handle your meat;)

Never had bear but I've had hog once. Never again. It was tough and just tasted.......well.......like I would imagine harcore's arse would taste.....:D[&:]

yep, had pigs of the ferral variety on several occasions, ranged from delicious to um yea....i think it is once again mostly what the amimals diet was and how it is prepared, thats why there are so many opinions[&:]...cornfed whitetail is second to none, while you get one that lives in the northwoods and it's somewhat less so...too many christmas trees in the diet:D

properly cleaned and dressed, wild hog is delicious. never et bear( keep thinking of a really big coon) slaugther houses kill and clean their products swiftly and cool it asap. game is no different. Kurt.

i boiled mybear meat 3 times with fresh water. the 3rd time the water didn't foam. then made crockpot stew out of it that was out of this world good. i also tried frying a little piece up without boiling. was real good for 2 chews, then i had to spit it in the dog bowl. its all about getting that strong flavor out.

If I can't kill it, cut it off the bone and grill it I don't want to eat it. All this special prep crap and cooking it in this and that drives me crazy. If you have to do all that it just tells me you are covering something up and it tastes like crap to begin with. I'll pass thank you very much. Road kill tastes alright if you cook it right, doesn't mean I'm jumping in line to eat it.;)
I agree with the above about the deer. In southern MI the deer eat pretty much what beef do, so the meat tastes pretty good. Up north sometimes they don't taste so great. And everytime I have had deer out west it was very gamey. If I had to base eating deer on that experience I would probably never eat it again unless I had to. However here in MI and Ohio deer meat tastes great. I also agree it depends on how you treat the meat after the kill. I try to keep it as clean as possible and get it to a butcher as soon as possible ( I don't do my own meat). I was taught the less contact and the cleaner you keep the meat the better. I don't slice the deer open and split the pelvis when I field dress one. I make an incision just large enough to get my hands in and get the organs out. Then I close it back up when I drag the deer out. If I can't get to a processor that day I slit the throat and let it hang over night. I don't know if it's right or not, but that is how I was shown, and it seems to work for me. My deer always tastes great when I eat it. I don't do anything special to it. I either fry it in butter (back straps) or throw it on the grill with BBQ sauce and beer ( I make my own sauce). I have had wild hog a few times and both times it was very good. Both times it was at a pig roast and it was slow cooked in a pit. And I don't know where it was killed, what type of pig it was or how big it was. All I know is there was plenty of it and I went back for seconds. I have never had bear. I did have moose once, and that was so-so. I live by a cabela's, I could probably try just about anything if I wanted since they sell it in their cafeteria. Just my opinions any way. Paul |
