Well, I'm left-eye dominant, but right-handed, so i shoot with one eye.

Bingo, that's what caused me to start shooting with both eyes open.

scubagtr, don't let that stop you. I'm right handed and left eye dominant. With a bit of training you can teachyourslef to shoot with both eyes open. Draw, anchor and line up your pins and then open your second eye. In time you'll grow a feel for it. IMO the benefits are enormous. No more not being able to see the target through your peep in low light situation. You'll see the animal with your left and the pins will be nice and bright in your right. It takes some practice but is worth the effort IMO.

to make my shooting even MORE complicated, I shoot one eye in good light, both in low. yeah, I know, it'll probably bite me in the arss sooner or later.

I do a little of both, like hoyt said as the light gets dim, I will open both and take a peek, I practice this way too.

I do a little of both too. I've kind of adapted this from shooting clays. I start with one eye open until I have the pin where I want it, then I open my left eye, not all the way though...more like squinting with my left eye. It sounds weird but it works!

Ive tried shooting with both open because I can see the benefits, I just cant do it. I see too much with both eyes open. When I have one open I can focus directly on my spot much better.
