Lots of animals would hit the Trophy rock, coons, porcupines are regular visitors.
Look for deer tracks on the ground close to the rock, otherwise, a trail camera placed pointing to the rock would be most informative.

You will also notice that the ground will start to get marked up. The minerals will escape into the soil (especially after rain) and the deer will begin to dig into the ground.
I use regular salt blocks and you can notice grooved markes on the block where the deer's mouth contacts it. You will prob notice the same on the rocks.
