could you spear a carp with a stick

With a fairly long, very sharp stick with some type of barb - could be done by someone, with better reflexes and more patience than me. A stick thats not sharp - I would say next to impossible.

A stick with a dull point would be tough. Dull arrows will work if the fish aren't too big or too deep.
When I was wading and bowfishing the other day I unscrewed the point of my arrow a bit too much. After I got the carp off the arrow, I noticed I had no tip. The barbs were still there, but useless because without the tip they just flop around.
So, I start slogging back toward the shore. Here comes a carp. I thought what the heck and I shot it. The pointless arrow had no problem going through the carp and pinning it in place until I could run over and get it before it worked the arrow loose. (picture me trying to run through rope like weeds with waders on... it had to be a funny sight) Shot another two before I went back and got another point.
