Ive eaten snakehead fish on several occasions in China, always served the same way. I am an adventurous eater, and I love the Chinese cooking. I have eaten fried snake, stir-fried snakeskin, softshell turtle (shell and all, except the boney bits) bighead carp head, whole fried cultur fish with bones and guts in, jellyfish, lots of squids and octopi and other weird critters, and many, many fish prepared in many ways.
I have to say that I'd eat snakehead again if it was in front of me, but I wouldn't cross the street for it. Of all the wonderful fish I have eaten in China, I liked snakehead least, with the possible exception of bighead carp head. The meat is very soft. (I'll pass on the sauteed jellyfish next time, though - probably the worst thing I've intentionally put in my mouth)
