They are good to eat, and we clean every gator gar we shoot. Most longnose also for that matter. That particular fish is getting mounted.

Not sure if you are being serious or not. But the serious answer is that you do aim right behind the gills. They have a crude lung that, if punctured, will take the fight out of them much faster than a body shot.
