I have a pile of them, but I carry the Gerber gator that I redesigned and Buck folding hunter most times. I have a Western fixed blade that I like using and always carry a bone saw. I have a huge custom skinner that I used for many years, but I find that it is too clumsy for most jobs, and is hard on the fingers if you don't pay attention to what you are doing. The curve and point are wicked on it, and all that it takes is to touch yourself, and you are bleeding too. For skinning, it is great, but for all other jobs it is too large.I also have a Buck that is similar to the zipper without the gut hook that I use often. I found through trial and error that I do not like anything with serrations on it when cleaning because they catch on the hide and eventually your fingers. Most of mine are HC steel and they hold a wicked edge. The Solingen knives are great, but are collecters so I don't use them very often. Also have some Franklin mint ones that get used once in a while, but favs are definately the Gator and the Western.
