Eggplant Strips Fried in Italian Breadcrumbs

A Bottle, or two, or three, of Red & White Wine

We always do the traditional "no meat' Polish dinner on Christmas Eve. Usually it's something like....

Green Bean Salad
Leafy tossed salad
Pierogi
Kutia
Herring
Mushroom Sauerkraut with Kluski noodles
Polish bakery Pumpernickel or Rye bread

Well, let's see now... we just have a small group now that our parents are gone and neither of my kids are married with children yet.
There's my signature seafood chowder which this year will feature littleneck clams that I steam, some bay scallops, shrimp and Atlantic salmon, chopped red potatoes, chopped thick slice bacon and celery. I use clam broth instead of water with plenty of half and half. I stir in a little mashed potato as well to make it extra creamy. I make a big ol' pot of that and it doesn't last long. We're doing a venison hind qtr. roast in the slow cooker and when it's done, I'm gonna slice it really thin (or maybe just shred it like pulled pork) so we can eat it on homemade rolls with melted mozzarella and sautéed portabella mushrooms with sweet onion. Sausage stuffed mushrooms are always a staple. Wife's baking a squash pie from one of our homegrown butternuts for dessert. We always set up an appetizer table as well which will have smoked Atlantic salmon (my own) along with homemade venison meatballs in a sweet and sour sauce, some jumbo peeled and cooked shrimp with plenty of cocktail sauce amped up with some homemade horseradish the neighbor and I got together and made this fall. Venison jerky, cheeses, crackers, cookies, etc...
Dang... I just realized how much prep work I still have left to do!

Since Christmas dinner is just me and I cook it myself I will over eat.
On the menu is Venison tender loin, and one butterflied back strap chop, Rutabaga mashed, fried Brussels sprouts, cheesy spinach and peach pie I bought, along with home made mead.

My 9yr old daughter (the foodie of my three kids) wants baby back ribs, so that's what we are having. Also fondue.
In my house Christmas breakfast is more of a big deal. My wife always makes some scary kind of egg casserole thing. I'm taking over and making biscuits and gravy.
