Looks mighty good... I make a lot of salami and sausage out of my venison also. I just like it for snacking.

Hope your sagegoats better than mine was. 10yrs ago I hunted muleys & lopes near Buffalo, WY. Killed a decent mulie & a toad of a prairie speedster. Had them processed in Buffalo & shipped to me at home. The mulie was great but despite my best attempts, I couldn't make the lope acceptable! The ranch we hunted on was flat to rolling, open country & sage truly was their primary diet so that's exactly what they smelled & tasted like. Just to overpowering.
