I shoot a Knight Wolverine .54 with 405 grain Black Belt Bullets over 115 grains of RS Pyrodex (grain) powder. I' ve shot 4 elk the last 3 years using this, and 2 deer. The Black Belt Bullets have that little plastic sleeve at the end of the projectile so it holds the gasses better and it' s not a sabot which you can' t have in Montana (or Colorado where I hunt mostly)

Just going on readily available supplies. The 50 cal will be the easiest to find a range of bullets and accessories for. A 300 - 350 grain 50 cal lead slug will take down anything that you want it to in North America. Check out this site, they have some good info regarding rate of twist, bullet weight and accuracy.
