Cayuga lake.. no wonder them fish are perfect. :D

For me I fillet them rascals, and then dip them fillets in milk. I roll that in a combination of corn meal, pepper, salt, garlic salt, paprika, and a very small amount of onion powder. Them lay them coated fillets in a hot fry pan with some olive oil in there. Cook them to golden brown and eat them fast before anyone else knows they are done.

MMmmm, gonna pull some grouper out of the freezer for tonight.
