Marinades are good for elk steaks. Some type of acid like vinegar or lime juice to make the meat more tender, oils to keep it moist, and your favorite seasonings for flavor- minced ginger (one of my favorites), garlic, etc. Elk being so lean like chicken is best cooked more on the rare side to keep it from becoming too dry.

Hey guys, thanks for all the replies. We bbq'ed some up the other night with just a few spices from the cupboard and it was DELICIOUS. I've never had it before and can't wait to get some more. A buddy of mine gave me a great marinade that I'm gonna try next time. If it's super good (which judging by the smell I think it will be) I'll post the recipe.

Then I plan to try some of the ideas on here. Thanks to all of you for the good ideas. I promise I won't tell anyone we've been swapping recipes on a hunting forum.:D
