Well, picked up the 4 yr old bull yesterday, on the rail it was 695#, so probably around 1200 # on the hoof. Gutting went pretty well, had a friend bring his skid steer to move bull around. Nice fat on this guy, should eat very well.

Careful what you wish for....we have already have seen temps fall to -40 actual air temp, without wind chill, lol. Last couple days, we had high's well below 0.

Did you keep the hide? I have the hide of a 2 year old bull that I got near Billings many years ago. I used it for a bedspread. You don't get cold sleeping under a bison hide. Now that I live in TX I don't use it and it is in storage. But I'm ready if the big freeze comes this way!

To answer my own question, How would a 4yr old bison eat....excellent.

Bison meat is great. A lot like moose or elk.

Bison meat is pretty good. I like elk better but we all have different tastes.
