What to do with bear meat?

RE: What to do with bear meat?
Bear is one of my favourite meats. It is a very dark meat, tastes like pork to me and if you smoke some roasts, it will taste like ham. That is my opinion only and I am sure you will receive a lot more. Also, don`t forget you might get yourself a dandy rug.

Hi Crazydd, spring bear opens tomorrow, April 15- May 15. The hide to these spring time bears will be in the greatest shape for makeing a bear rug or mount as opposed to harvesting a fall bear. The meat taste strong to me and it taste ok, not great,[&o]but there is other better eating meat out there but I would not waste any of it. Good luck and keep us posted on how you do. Bobby

Spring Black Bear meat is great in my opinion. I' m hoping to take one or two more this spring and plan to salvage all the meat. It is great in summer sausage and as roasts and steaks. Just make sure to cook it thoroughly due to possibility of trichinosis.
Good luck on your hunt!
