Elk Bags are available at most outdoor sporting goods stores. I also know of quite a few people that use pillow cases. I've used the elk bags on animals such as caribou and moose, and I'm pretty sure (the name kind of gives it away) that they will work on elk.

If you are going to make the bags however, the dimensions for the elk bags are 30" wide by 50" tall. That is probably one of the better references as to size that you will need. Make sure however that whatever material you make the bags out of will allow the elk meat to breathe, but not too weak that when your boys pack a meat full of scraps they bottom won't tear out.
