Mountain Lion,by far the best meat.
I have to eaten beaver,it's very good.

I'm pretty much a "meat" guy. Grilling improves most meat and a cold beer as a side with your grilled meat makes it about perfect. If it is in the field and you are with friends it could be skunk and taste fantastic.

Of what i can hunt regularly in my province:

Moose and Elk are even #1
Antelope
Whitetail
Partridge, Ruff Grouseand Pheasants
Mule Deer
Ducks
Canada or Specks
Sharptail Grouse
Black Bear
way down the list.....White geese (snows, blues and ross)

I would love to try elk and moose meat. But I rank Wild Turkey my favorite so far, followed by quail, whitetail, and fish (flatheads, mississippi whites, crappies walleyes... ect)

Elk, Elk, Elk, and Elk. I kill alot of ducks and geese, and the only way that I found to enjoy them is in a spicy jerky.

The oven fried whitetail back straps my wife cooks and fried Rainbow trout are my two favorites. Cottontail is pretty good too.

How do you prepare and cook a beaver? We have one wrecking havoc on our trees around one of our ponds, and he's about to die. Let me know what you do and I'll give him a shot

My list is as follows:
Quail and Pheasant (Tie for first)
Whitetail
Dove

Ya, I forgot about Mt.Lion. Mmmmm. Now thats tasty. When I shot mine I just kept the backstraps, thinking it would probably be gross or like I was eating some messed up oriental dish. But wow, thats some goood meat. I have been kicking myself for not keeping the rest of the meat. Now I know I'll probably never get a chance at a Lion again! Think about what those big cats eat!!!!!! You are what you eat.
