The Remington model 700 is a VERY nice gun. I love Remington. If money isn't a problem, you might want to consider looking at the Weatherbys. My friend got one last year and it too is a very very nice gun. .270 is a very nice cartridge. It is very very flat shooting. .243 has less kick and is pretty close in the flat trajectory. Another cartridge that you might want to look at is .25-06. That is the gun I started out with. It doesn't kick much and is really flat shooting.
