1st - soil test and amend as required
with that much land you could do some different things - most of which will depend on your bugdet and what equipment you have access to.

simple plot that critters love would be clover (mix of ladino & red)
you may want some warm season stuff that will sustain animals through the summer
maybe some annuals that provide good cover/food in the spring & fall
corn?? - expensive to grow/manage

like i said, it all depends on your goals, budget, & resources
