RE: What are processing prices in your area?
In North Western Pa, I paid $40 for a basic cut freezer wrapped. The same cut at a butcher I use in the North eastern part of the state charges $75 but it is vacuum packed. ($65 for a yearling) I have paid as much as $270 at a real professional butcher shop near Allentown Pa, where they made the entire deer into specalties for me. Hot dogs, Italian sausage, Lebanon Bologna, and the like.. and before you ask, yes it was worth it, for the lebanon bologna alone!
