I looked at that link that you posted. Amazing, you can get anything off the 'net nowadays!
One comment, I have NEVER cut open the chest cavity, and have never met anyone who does! It looks like it would be much easier to get the heart and lungs out, but I have just always reached up in and done it without sawing through the chest. NOW I see why some of my buddies carry small bone saws into the woods with them......
