RE: field dressing question
I do the anus ralated cutting after I get the guts laid out of the carcas. No particular reason other than what I'm fixing to be handling. I use a fairly large pocket knife (4" long thin blade) and make a circular cut around the outside of the anus (and wazzle wazzle if a doe). The blade needs to extend a couple inches into the pelvis to disconnect all of the stuff that makes it work. Once the cutting is done you just pull the parts into the carcas and out. I usually have a heavy cleaver (used by the phone co. to split lead cases) that I split the pelvis with. By splitting the pelvis the passage way is more exposed and removing the plumbing is a bit faster.
