Congratulations on the nice buck.

To get the brains out you first boil the head for about two hours. Then get a butter knife and swish it around in the brain cavity through the hole the spinal column goes into. Use your garden hose under some pressure to spray them out. There are some membranes you'll have to pull out and those forcepts you use for taking out fish hooks (from fish) do a nice job. I just did my son's first deer's skull and it came out great. Picture is on the taxidermy forum someplace recent.
