From your nocking point to your rest, the arrow should be pretty much level. I would think the shop would have set the rest height so that the arrow is at the same height as the threaded hole where the rest mounts. If it were mine, I would set it there, and see how the arrow looks. If it looks level and at a 90degree angle with the string (which you could measure with a small square, then that is how the shop probably set it before it moved. I would try that and see how it shoots for you. You should probably take it back to the shop and tell them what happened anyway. They will most likely tell you how it was set up.
