Ya'll don't fillet that pretty dark brown meat into thin strips and fry them in a deep fryer with hushpuppies ???

Actually, on the Buffalo river, my Dad grew up snaggin suckers and they would can the meat and then make fish patties out of it. Of course, river suckers have white meat - and they don't smell either <img src=icon_smile_tongue.gif border=0 align=middle>
