I have a 2001 ES (100lbs, 30 ", 500 gr = 336 fps) and it is one AWESOME bow!! I'll try to answer as many of your questions as I can. The winner's Choice material is BCY 8125.
The difference in the weights of the 2 model years is 3 lbs 3 oz. without the sand traps and 3 lbs 5 oz. with, but I'm not sure if the limb pockets are the sole reason for the difference.
The limb pockets are open faced and static.
Limbs are Gordon so I'm pretty sure all glass.

I would also recommend this bow to anyone. After reading Matt's review of the Dual cam Pro 38 I picked one up off ebay, so I'm anxiously awaiting its arrival.
