I went to FWL Outfitter and Guide school in Hamilton MT. It is gone now but there are others around. Irv Malrich used to run a good one but I'm not sure if it is going now either. They are kind of a joke but are a good place to learn horsemanship and packing. As far as guiding it comes with time. You have to learn the country, the animals, and how to deal with people. All kinds of people!!! One of my mentors used to say when he started he saw an add that said "SO YOU WANT TO BE A BIG GAME HUNTING GUIDE" It never said anything about stubborn mules,sleeping in the rain, or guys from New York that didn't even know how to load their gun when they got off the plane.
