RE: Need input on knife sharpeners
I use the Lansky and have both the Diamond and stone inserts. These will do a great job getting a real good edge on a knife. Once thats done I use the EDGE MAKER sharpener . Just a couple pulls through that and the edge will be back good as new. I like high quality very hard knives but once they get dull then they are much harder to get sharp again. The best edge holding knife that I have is a Cold Steel Master Hunter. What I use the most is a small Buck folder. Buck holds a fair edge and the small ones are easy to resharpen. I hate big long knives anymore. To much work to sharpen.
