I've never had sting ray wings, but I heard they taste like scallops. I also heard that some people use a hole punch type of tool to punch the wing meat out into round scallop-like pieces?
All I know is that they are real friendly in the water. Down in the Gulf, they swim right up to you and are just as curious about you as you are of them. I've let some really big one's (30-50 pounders) go. Personally, I don't think I could kill one. I've also heard that they cry out if you try to hurt them???? Again, I don't know. I've never tried. Let me know how they taste
