I made some jerky earlier this year, using terryaki, regular and cajun seasoning. I found that marinating for 24 hrs in shallow dish (I used glass) very good. Then I used a dehydrator and found if I used 3 trays, with space between each slice, it took abot 12 hrs. When I used 5 trays, it took about 18 hrs. Then I packaged it up in plastic bags and put in a large coffee can and keep in freezer. When I share it with my co-workers, they can't get enough. So I take it sparingly to work now!!
