I will give Howler a thumbs up! The most gamey tastes will come from sawing thru the bone. Anyone who does not beleive this should try it sometime.
Silver skin will detract from meat, too.
Clint... I beleive what you are refering to are the tarsal glands and can definately affect the meat.
