Yes. It has a cavity inside the the chicken where you can put apple juice or some other flavoring liquid. As for spices, I like salt, pepper, rosemary, dried mustard, brown sugar and either chopped shallots or garlic. The roaster gets your skin nice and crisp and the chicken is very juicy and can basically be cut with a fork.
