Biggamehoundsmen.com has a section on running coyotes that will have lots of good info. If going with a hound speed is important I'd recommend getting it from someone who runs coyotes or bobcats. But some guys use beagles, I guess coyotes run slower and they shoot them in front of dogs, so lots of options.
